Check your builds, something's screwy. My Frontier Hotel is missing most of the wood from the main and second floor, doors are open that are never opened, the fence has a large section missing, and the barn outside has a large part of the roof and much of the walls missing. Maybe it was a lightning strike, but there are also holes in the houses there: http://mc.tomasu.org/#/-1484/64/-296/max/0/1, and pieces of walkway missing on the castle (can't show that on a map).
This could be a griefer or it could be corrupt map data. Although I've been to my hotel since we trimmed the map, and there was nothing broken back then, and it's weird that there are doors open.

Well if everyone is know the next bet is to look at the player/player spawns and the narrow the login time a bit..
Some people are rather far away, if it looks like lazy harvesting at ground level look for someone that logged out near by.
I don't know why they would bother harvesting some of the wood planks and some of the brick blocks and some of the stairs from the roof but not all of it. And I'm sure once they saw my chests they would've checked them and taken the diamonds.

I saw that, too. It kinda looks like the edge of one of the rounded areas. Once a user enters an area, square areas are filled in. I would check if it looks the same in-game. If it doesn't, then it's an Overviewer glitch that could be fixed by re-rendering.
Meanwhile my barn is definitely half-destroyed and all the animals are wandering around :( This does provide me with the impetus to change the interior design a little - I'm going to replace the fences inside with something else so the animals don't keep displacing from one cell to another. Probably won't look as nice, though.

All those IP addresses are the same, and it matches the geolocation I believe the player is in. Although it's only located down to a city, so someone could have taken their login credentials.

About the entity id, I assume its a runtime allocated entity id that the game uses for dynamic entities. so its not going to map to anything at all.
gizmo883 is showing a movement pattern that could allow for them being the one setting things on fire. Last login was down near her house in LadyLeenie's village, the one before that was at spawn, the several before that were all down by her house again. They've also been in the Edge City area several times.
Man, I'd hate to see where all of my logins happen...
As for rolling back, have we found any other damage? If not, how about we get on tonight and just fix it up? It doesn't look as bad as when yon other griefer traipsed all over and left manholes in every wall... And I have no problem with us spawning in the materials to fix it. Of course, if there's other damage that I haven't see yet, well, then a rollback would be good.

If the damage is only a couple of days old I'd REALLY prefer for us to roll back to a backup

Well that IP coincides with Shaw Communications, the internet provider their family uses in the city their family lives in. So that looks like it was all activity from that minecrafter or else one of their family members.
The minecrafter has been made aware that their account appears to have been griefing the server, so if it was them, then hopefully they've decided to stop. I've passed along that if they want access back to this server they will need to acknowledge that they've changed their password.

Since we have Bukkit installed, are there any good tools that we can use to keep track of what people do? Then figuring out who's griefing would be much easier.
I'm sure there are all kinds of bukkit plugins for all sorts of things. There are also anti griefing plugins. Feel free to research them ;) I don't have a lot of time the next few days. going to try and get my hobby electronics project working for the ENTS openhouse on saturday.
I figure a time based head map of activity per user would be enough to pick out someone doing damage... If you had their 2d coordinates over time you could just match a user up with areas of destruction fairly accurately.
A more advanced system I would suspect would need to track blocks destroyed that where placed by a different user.
I know of at least one logging plugin that will mark entries for some user activities (like placing lava or tnt blocks)
In order to do real harm undetected you'd have to get to the Rube Goldberg level of creative destruction.

LLBYH was on fire when I got there so I put out what I could, I don't know who runs that place but they will need to rebuild, there's a lot of damage.
Taj Moo Hal bunkhouse and tree farm is mostly destroyed but I fixed a few other little things in that area
There were two basic kinds of damage done / to look for:
-TNT
-Fire
All said and done it took 2 hours to repair most of it, so it really wasn't that bad.
In a way I feel sorry for the griefer and kind of disappointed, not one basic trap anywhere yeesh!

Fire is paused when a chunk is unloaded. In fact, /everything/ is paused. All state is saved, and the chunk is flushed to disk. even the state of a piston or a burning furnace (a burning furnace is a separate item id if you cared to know)
I restocked my animals the cheaty way, with spawn eggs, since there were a large number before and they were all killed or scattered. I also restocked the cows at the Urban Ranch, and rebuilt the Urban Ranch with glass blocks and put the sheep, pigs, and chickens back in the right spot.
