I'd really like to get back into Minecraft this winter and it might be fun to do it on a multiplayer server

I have some interest in the new feature but not a lot of interest in playing Minecraft at the moment but sometimes it just take a little to get hooked again.
Any wish list for vanilla tweaks, quality of life modes, anything different from the current world / server configuration?
Any known seeds you are interested in?
I am more than happy to get it setup even if there is a low player count
