While talking with Mr. A on the weekend, I found out he hadn't heard of (or at least regularly watched) Direwolf20's lets play's! I was somewhat surprised, he's almost like the official mod spotlight dude for many of the main mods.

Season 4 of his Let's Play which was using Minecraft 1.2.5 and a crap load of mods (EE, BC2, IC2, ThaumCraft, RailCraft, MystCraft, Portal Gun mod, Wireless Redstone, RedPower 2, etc) just finished up. If you really don't see yourself sitting through all 106 episodes, each of which is 20-40 minutes long (excluding the 60min+ special episodes), try and watch the last few at least :) The way he ends a season is pretty funny.
Another I started watching recently is SpadgersHat: http://www.youtube.com/user/SpadgersHat They are pretty amusing especially since one of the trio is a serial griefer.
And I think you may not all be familiar with Monkeyfarm: http://www.youtube.com/user/monkeyfarm he does some pretty cool builds.
I'm pretty sure everyone knows about the rest of the youtuber's I watch.
CNBMinecraft is another builder worth watching, not so much let's play style stuff but tutorials.

Monkeyfarm does a lot of tutorials. And Direwolf20's stuff is very tutorial like (at least if you catch him doing something new in that particular series). Direwolf's buildcraft auto sorting and crafting setup in season 3 is incredibly cool and he explains everything as he builds it.
