Okay, amazing car handling skills there.  Sucks that he shredded the tires and kept going on the rims - they're toast now.  Also, this car is a Ford Fiesta in name only.  The engine, the transmission, the suspension, the steering mechanism, the side windows, the mirros, it's all different.  Hell, it's an AWD which you can't get in stock Fiestas at all.  The only things that are probably original are the body and doors/hood/tailgate.  And even those could have been replaced with lightweight pieces.  Oh wait, they kept the top half of the dash cover, although they took out all the instrumentation and air vents and replaced the radio readout with their gear counter.  The next step is to make a fiberglass Fiesta-looking shell with fake lights.

I have the same complaint about people who think that stock car racing races car that are stock or near-stock when in fact they're a tubular chassis welded together with a super-light-weight plastic shell over top with fake headlights stickered on.

The Monte Carlos that win in stock car racing are not the Monte Carlos you can buy.  As opposed to the old Group A racers of the 80s and 90s, who had to drive cars that were generally available to the public and which they were only allowed to modify a moderate amount.  Of course, as the Wikipedia article points out, the rules weren't perfectly written and some manufacturers found loopholes.

Well I think it is because of speed and safety... I think the drivers are happier it isn't stock :D

Unless you're talking about those 110km/h speed boats that get airborne off tiny waves...  Those are absolutely less safe than racing airplanes.
