I have been using Plex AMP as my music front end to plex for years, but to be honest I use Spotify more.

I never found the main plex app that good for music.

If it makes you feel better it seems like a lot of people are upset with the latest app redesign.

This isn't the first time Plex has drastically changed things.

Does the Plex app work on old laptops (one that is still Windows 8 and thus can't even upgrade Chrome anymore) ... also is there a Roku app?

I have a handful of MP4s that I would prefer a better UI than just doing USB stick into my RokuSmartTV.

(Or if a better alternative simple app is what you guys recommend?)

((Otherwise my OCD/ADHD brain is thinking "how hard could it be to build a simple server and Roku client app in .NET...))

I'm not quite sure what you're asking, the server can run on a potato, the client app can be downloaded on Roku/mobile, you can access the server interface from a browser on your desktop

Also Windows 8? WINDOWS 8!!!???

Plex is two pieces:

Plex Media Server - the thing that serves out all the video content

I don't know if you'd want to run Plex Media Server on an old laptop. Those of us running PMS have it running on a desktop or rack-server-like setup that's always on, so that anyone at any time can start watching their shows without having to turn anything on.

PMS, if running on Windows, requires Windows 10 (build 1607) or later.

Plex Clients - the things that you use to view the video content

A lot of us use the Plex app on a Roku (Roku calls apps "Channels"). If you have a Roku Smart TV, you can probably really easily add the Plex "Channel" (app) on it.

If you want to watch your video content on a laptop, there's a Plex app for Windows. The Plex site says it requires Windows 10 or later:

So the question is, do you want to set up a permanently-on computer with PMS installed that can act as the server?
