I'll work 55 hours a week if I'm being properly compensated for those hours - 1.5x for any hours over 8 per day or 44 per week is the minimum (so 44 + ( 11 x 1.5 ) = 60.5 x hourly rate), 2x for any hours over 8 per day or 40 per week is what I would seek in a contract if self-employed (so 40 + ( 15 x 2 ) = 70 x hourly rate).

I'll work fluctuating hours per week but keep track of my hours and average them out over the months and years, I don't mind putting in some extra hours one week to be able to work shorter days another week.  The key is to record every day so you can prove (to yourself and to others) that yes you really have worked a bunch extra already.
